What are burnt ends?
The wonderful pointed end of a beef brisket. There is only a small amount for each brisket so many times they are not available. They truly are delicious. 🙂

Burnt ends are the pointed end of a smoked beef brisket that is cooked longer than the rest, but because of the fat content it doesn’t get dry just a little darker. It is delicious and makes a wonderful sandwich or just eaten alone with side of beans, coleslaw, etc. You can’t find it everywhere so when you do, it is special. Yes, maybe I should specialize on doors and food. I’m going to have to give that some thought. 🙂
Don’t think I’ve ever heard or seen burnt ends Judy – I shall have to ask MrH who is a bit of a foodie! PS Doors and food would be perfect I think! 🙂
Here’s what Wikipedia has to say about burnt ends:
“Burnt ends are flavorful pieces of meat cut from the point half of a smoked brisket. A traditional part of Kansas City barbecue, burnt ends are considered a delicacy in barbecue cooking. Either the entire brisket is cooked whole, then the point end removed and cooked further, or the point and flat are separated prior to cooking. Due to the higher fat content of the brisket point, it takes longer to fully cook to tender and render out fat and collagen. This longer cooking gave rise to the name “burnt ends”. Sometimes when the flat is done, the point is returned to the smoker for further cooking. Some cooks re-season the point at this time.
Kansas City style burnt ends are usually served cubed with sauce either on top or on the side. A “proper” burnt end should display a modest amount of “bark” or char on at least one side. Burnt ends can be served alone (sometimes smothered in barbecue sauce) or in sandwiches, as well as in a variety of other dishes, including baked beans and gumbo.”

When I was in KC briefly I went to Arthur Bryant’s and was surprised that I didn’t especially like the BBQ. I guess BBQ is a matter of personal taste, like religion.
Yes, personal taste because some has a vinegar base and some has more molasses. Although Arthur Bryant’s is loved by the masses, it is not one of our favorites either. Good thing there are lots to choose from. 🙂

More photos to come. 🙂 We were able to enjoy the frozen custard twice, and it was delicious both times. Of course this week, I’ll be trying to up my walking to compensate for all the good food I enjoyed. 🙂
